When connected to the Turbofan E35 convection oven, the P85-12 is the perfect choice in power and practicality. Turbofan’s trusted technology delivers accurate proving of fresh and frozen dough while accommodating 12 16” x 29” trays, or 12 18” x 30” trays with optional 18” rack set. The P85-12 controls heat and humidity for accurate yeast activation and the thermostat control ranges from 20-40°C, while in hot holding mode the temperature range is 65-85°C.
